  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons Dijon mustard
  • For the Mushroom Duxelles:
  • 1 lb cremini or button mushrooms finely chopped
  • 1 tablespoon butter
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme leaves or ½ tsp dried
  • Salt and pepper to taste
  • For Wrapping:
  • 6 –8 slices of prosciutto
  • 1 sheet of puff pastry thawed if frozen
  • 1 egg yolk + 1 tsp water for egg wash
  • Plastic wrap for rolling
  • Optional Garnishes:
  • Fresh herbs like parsley or thyme
  • Extra puff pastry shapes for decoration

👨‍🍳 STEP-BY-STEP INSTRUCTIONS

🥩 Step 1: Sear the Beef

  1. Season beef with salt and pepper.
  2. Heat olive oil in a pan over high heat.
  3. Sear the beef on all sides for 2–3 minutes each, until browned.
  4. Remove from heat and brush with Dijon mustard.
  5. Let it cool completely.

🍄 Step 2: Make the Mushroom Duxelles

  1. Finely chop mushrooms (use a food processor if you’d like).
  2. Cook them in a dry pan until the moisture evaporates.
  3. Add butter, garlic, thyme, salt, and pepper.
  4. Stir until mixture is soft and golden.
  5. Set aside to cool.

🧊 Step 3: Wrap in Prosciutto

  1. Lay plastic wrap on your work surface.
  2. Overlap prosciutto slices into a rectangle.
  3. Spread mushroom duxelles over prosciutto.
  4. Place beef in the center and roll tightly into a log.
  5. Chill in the fridge for 30 minutes.

  1. Roll out puff pastry on a floured surface.
  2. Unwrap beef from plastic and place on the pastry.
  3. Fold the pastry over and seal the edges.
  4. Decorate with pastry scraps if desired.
  5. Brush with egg wash.

  1. Preheat oven to 400°F (200°C).
  2. Place Wellington seam-side down on a baking sheet with parchment paper.
