1. Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Spray a non-stick muffin tin or silicone mold with cooking spray.

2. Blend the Base

  • In a blender, mix together:
    • Egg whites
    • Cottage cheese
    • Garlic powder
    • Onion powder
    • Salt and pepper
  • Blend until smooth and fluffy (about 15–20 seconds).

3. Add the Fillings

  • Pour the blended mixture into a bowl.
  • Stir in:
    • Shredded cheese
    • Bell peppers
    • Spinach
    • Mushrooms
    • (Optional) Cooked turkey bacon or sausage

4. Pour and Bake

  • Divide the mixture evenly between 8–10 muffin cups.
  • Bake for 20–25 minutes or until the tops are puffed and lightly golden.
  • Let them rest for 5 minutes before removing from the pan.
