1. Season and Prepare the Chicken

  • Slice chicken breasts in half horizontally to make 4 thin cutlets.
  • Pat dry and season both sides with salt, pepper, and garlic powder.

2. Cook the Chicken

  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Sear the chicken for 4–5 minutes per side until golden and fully cooked.
  • Remove from the pan and set aside. Cover with foil to keep warm.

3. Make the Sauce Base

  • In the same skillet, lower the heat and sauté garlic for 30 seconds.
  • Add sun-dried tomatoes and stir for another 1–2 minutes.
  • Pour in chicken broth to deglaze the pan, scraping up flavorful bits.

  • Reserve ½ cup of pasta water, then drain pasta.
